I’ve been trying to learn all of my mom’s best recipes and this week I bring to you a delicious recipe for Instant Pot Mulligan Stew. What is Mulligan Stew? It’s a hearty stew made with meat, veggies, and potatoes, although my mom’s recipe uses macaroni shells.

When I asked my mom why she called this recipe Mulligan Stew, she had no clue. Her mom called it Mulligan Stew, so that’s what she called it. After doing a bit of research, I found out that Mulligan stew was a meal typically shared by the homeless.
This community style stew was made by combining whatever ingredients everyone had on hand. With each person contributing whatever they had, the end result was a yummy and flavorful stew.
Ingredients for Mulligan Stew

- 2 Tbsp Avocado oil
- 2 Lbs Beef stew chunks
- 8 oz Macaroni shells
- 1 Onion, diced
- 8 oz Mushrooms, sliced
- 3 Cloves of garlic
- 2 tsp Garlic salt
- 1 cup of tomato sauce
- 14.5 oz can of fire roasted tomatoes
- 8 oz can of diced green chilis
- 2 zucchinis cut into large chunks
How to make Instant Pot Mulligan Stew
- Press the saute button on your Instant Pot and coat the bottom of the pan with avocado oil.
- Add the macaroni shells and continuously stir until the shells are golden brown. If you don’t mind extra dishes, you can always complete this step in a separate pan.
- Remove the macaroni shells and set aside.
- Add the beef stew chunks to the Instant Pot and brown for 3-5 minutes. Once browned, remove the beef stew chunks and set aside.
- Add the onions and mushrooms to the Instant Pot and allow them to cook in the remaining juices for 3-5 minutes. Once translucent, add the minced garlic and saute until fragrant. Be careful not to burn the garlic.
- Press cancel on the Instant Pot and add the beef chunks, along with the garlic salt, green chilis, zucchini chunks, tomato sauce, and fire roasted tomatoes.
- Once all of that above ingredients are in your Instant Pot, add the browned macaroni shells on top and DO NOT STIR.
- Pour the chicken broth over the macaroni shells and set your Instant Pot lid to a sealed position.
- Cook the Mulligan Stew at manual pressure for 6 minutes.
- Once the timer goes off, do a quick release, but BE CAREFUL!
- Serve and enjoy.

Notes
*Cut your zucchini into large chunks to prevent them from turning into mush in the Instant Pot.
*Don't allow your Instant Pot to naturally release because this will make your shells too soggy.
